This quick and effortless dessert brings the warmth of cinnamon and the comfort of a soft and fluffy scroll to your mug in minutes.
Ingredients
40g salted butter, softened
1 tsp ground cinnamon
1/3 cup brown sugar
6 slices Woolworths Bakery fruit toast, crusts removed
2 free range eggs
1/2 cup milk
1/2 tsp vanilla extract
1 tsp pure icing sugar (to dust)
1/3 cup thickened cream, to serve
Directions
Step 1
Combine butter, cinnamon and half of the brown sugar in a small bowl. Place bread on a clean work surface. Using your hands, press down on slices lightly to soften. Spread butter mixture evenly over slices.
Step 2
Working with 1 slice at a time with the short side facing you, roll up tightly. Cut each slice evenly into 3 pieces. Place bread, cut-side up and close together, into a 1-cup-capacity microwave-safe mug or ramekin. Repeat with another 2 bread slices, packing tightly to fit. Repeat process with remaining 3 slices to fill a second mug.
Step 3
Whisk eggs, milk, vanilla and remaining brown sugar in a jug until well combined. Pour evenly over bread in mugs. Set aside for 1 minute to soak.
Step 4
Cook mugs, one at a time, on high for 2 minutes. Set aside for 2 minutes to settle. Dust with icing sugar. Serve mug cakes topped with cream.
