Add grilled peaches to your sausage traybake for a surprisingly sweet summer twist.
Ingredients
450kg Woolworths Angus beef & caramelised onion sausages
2 red onions, cut into wedges
1 head garlic, cut in half
2 tbs Woolworths extra virgin olive oil
1/4 cup Woolworths balsamic glaze
3 peaches, halved
300g cocktail truss tomatoes
60g baby spinach leaves
1/4 bunch continental parsley, leaves picked, roughly chopped
Method
Step 1
Preheat oven with a large baking tray to 220°C/200°C fan-forced.
Step 2
Add sausages, onion and garlic to preheated tray. Drizzle with 1 tbs oil and 2 tbs glaze. Bake for 10 minutes.
Step 3
Add peaches and tomatoes to tray. Drizzle with remaining oil. Bake for 10-12 minutes, or until sausages are cooked and tomatoes are slightly collapsed. Drizzle with remaining glaze. Sprinkle with spinach and parsley. Serve.
