Easy Back-to-School Recipe Idea

Crumbed Fish Rolls

Step 1

Preheat oven to 180°C. Bake fish for 20 minutes or until cooked through.

Step 2

Combine avocado, parsley and a squeeze of lime in a bowl. Season with freshly cracked black pepper.

Step 3

To assemble rolls, spread avocado mixture onto base of bread roll and top with handful of baby spinach. Add tomato, cheese and cucumber, then top with fish fillet and bread roll top. Serve with salad.

Ingredients

1 avocado, mashed

4 medium tomatoes, sliced

2 Lebanese cucumber, sliced

2 tbs continental parsley, chopped

6 slice low-fat cheddar cheese

2 limes

2 cup baby spinach leaves

425g frozen crumbed fish fillets

salad leaf mix (to serve)

6 wholegrain bread rolls, halved
