In a jug combine lime, milk, peanut butter and soy sauce
Place chicken in a shallow glass or ceramic dish and pour in 1/4 of lime mixture to marinate for 15 minutes.
Combine lime juice and onions in a separate bowl
Cook chicken in a large pan until cooked through. Remove from pan and toss in remaining lime mixture.
Steam broccolini and bok choy together until tender. Top rice with chicken, broccolini, bok choy, drained onion and coriander leaves. Serve with fish cakes and lime wedges.
