INGREDIENTS

• Coriander

• Avocado

• Lime

• Greek-Style Natural Yoghurt

• Garlic Cloves

• Spring Onions

• Red Kidney Bean

• Chicken Mince

• Ground Cumin

• Shredded Light Tasty Cheese

• Flour Tortillas

• Leafy Mixed Salad

• Green Chilli

• Extra Virgin Olive Oil

METHOD

1. Combine mashed avocado, lime zest and juice, yoghurt, chopped coriander, half of the garlic and half of the onion in a bowl.

2. Place beans in a large bowl. Using a fork, coarsely mash beans. Add chicken, cumin, cheese, remaining garlic and remaining onion. Stir to combine.

3. Place 1 tortilla on a chopping board. Using damp hands, shape 2 tbs chicken mixture into a log. Place log on top of tortilla, then roll tortilla to enclose. Repeat with remaining tortillas and chicken mixture.

4. Spray taquitos with oil. Cook in batches in Air-Fryer at 200°C (less heat if your air-fryer is smaller than 5L); turning halfway, for 8 minutes or until cooked through and golden. Place taquitos on serving platter with salad leaves and avocado mixture. Serve taquitos sprinkled with remaining coriander and chilli.

• Brussel sprouts

• Poached chicken

• Extra virgin olive oil

• Sourdough bread

• Garlic aioli

• Eggs

• Gem lettuce

METHOD

1. Preheat oven to 220°C.

2. Toss bread, bacon and oil together in a bowl. Transfer to tray and bake for 12 minutes or until crisp and golden. Set aside to cool.

3. Meanwhile, boil your eggs and then once cooked set them in cold water. Add sprouts to same pan and blanch for 30 seconds. Drain and refresh in cold water. Peel eggs and slice.

4. Combine aioli and lemon juice together to season. Layer lettuce, sprouts, egg, chicken, bacon and bread into 3 jars, adding dressing as you go. Secure with lids and refrigerate until ready to eat.

1. ASK R U OK?

• Be relaxed, friendly and concerned in your approach. 

• Help them open up by asking questions like "How are you going?" or "What’s been happening?"  

• If they don’t want to talk, don’t criticise them. 

• Tell them you’re still concerned about changes in their behaviour and you care about them. 

• Avoid a confrontation. 

• You could say: “Please call me if you ever want to chat” or “Is there someone else you’d rather talk to?” 

2. LISTEN

• Take what they say seriously and don't interrupt or rush the conversation. If they need time to think, sit patiently with the silence.

• Don’t judge their experiences or reactions but acknowledge that things seem tough for them.

• Encourage them to explain: "How are you feeling about that?" or "How long have you felt that way?"

• Show that you've listened by repeating back what you’ve heard (in your own words) and ask if you have understood them properly. 

3. ENCOURAGE ACTION

• Ask: “What have you done in the past to manage similar situations?”

• Ask: “How would you like me to support you?"

• Ask: “What’s something you can do for yourself right now? Something that’s enjoyable or relaxing?”

• If they've been feeling really down for more than 2 weeks, encourage them to see a health professional.

4. CHECK IN

• Set a reminder in your diary to call them in a couple of weeks. If they're really struggling, follow up with them sooner.

• Ask if they've found a better way to manage the situation. If they haven't done anything, don't judge them. They might just need someone to listen to them for the moment.

• Stay in touch and be there for them. Genuine care and concern can make a real difference. 

INGREDIENTS

• Woolworths COOK slow-cooked butterflied beef

• Woolworths COOK simmer veggie mix

• 1/4 bunch parsley

METHOD

1. Add beef, sauce sachet and 1L water to a medium saucepan over high heat. Bring to the boil and reduce heat to low and simmer for 10 minutes.

2. Remove beef from pan and transfer to a board. Using 2 forks, shred beef into chunks.

3. Return shredded meat to the saucepan. Add vegetables and simmer for a further 10 minutes.

4. Serve soup sprinkled with parsley.

METHOD

1. In a jug combine lime, milk, peanut butter and soy sauce

2. Place chicken in a shallow glass or ceramic dish and pour in 1/4 of lime mixture to marinate for 15 minutes.

3. Combine lime juice and onions in a separate bowl

4. Cook chicken in a large pan until cooked through. Remove from pan and toss in remaining lime mixture.

5. Steam broccolini and bok choy together until tender. Top rice with chicken, broccolini, bok choy, drained onion and coriander leaves. Serve with fish cakes and lime wedges.
