A quick and tasty lunch the whole family can build together these school holidays! Packed with crunchy crumbed fish, creamy avo, fresh veg and zesty lime on a wholegrain roll – it’s an easy way to keep little bellies full between holiday adventures.
Ingredients
1 avocado, mashed
4 medium tomatoes, sliced
2 Lebanese cucumber, sliced
2 tbs continental parsley, chopped
6 slice low-fat cheddar cheese
2 limes
2 cup baby spinach leaves
425g frozen crumbed fish fillets
salad leaf mix (to serve)
6 wholegrain bread rolls, halved
Directions
Step 1
Preheat oven to 180°C. Bake fish for 20 minutes or until cooked through.
Step 2
Combine avocado, parsley and a squeeze of lime in a bowl. Season with freshly cracked black pepper.
Step 3
To assemble rolls, spread avocado mixture onto base of bread roll and top with handful of baby spinach. Add tomato, cheese and cucumber, then top with fish fillet and bread roll top. Serve with salad.
